The nutritional information on the kelp comes from the Ministry of Education, Culture, Sports, Science and Technology website "Food Composition Database" (http://fooddb.mext.go.jp). The database is all in Japanese and the interface is a little difficult to use, but it has good information.
The recipe is a little short on a few items: Omega-6 Fatty Acids, Chromium, Potassium, Sulfur.
It totally lacks Chloride. [Update: the nutrition label on the package of salt does not include an amount for Chloride, but it does provide an amount for sodium and a separate amount for sodium chloride. I'm not sure if this is right but I think sodium and chloride are in a ratio (by weight) of about 1:1.5 in sodium chloride. I updated the nutritional value of the salt to reflect this ratio.)
I haven't actually tested this recipe, so I have no idea how it tastes. I plan on making a test batch with similar items bought in local stores (such as Kaldi).
