This is what I've bee drinking / eating since January, with a fair amount of tinkering with the oils -- had to ramp up the MCT oil, which was initially kind of hard on my stomach but also seems strongly correlated with energy levels.
I run it through the Blendtec once, wait 5-10 minutes, and blend again. The result, after chilling, has the taste and consistency of something like chocolate pudding (thanks xanthan gum!) which I like.
I've lost 35 pounds so far, eating this for about 80-90% of my meals.
