Based on Bachelor Chow 2.0 - "People Chow". I just used that great recipe that @maxk made and tweaked it a bit. I was concerned about the high Niacin levels, so I changed a few things to bring the Niacin down and then added in cinnamon and parsley to maintain the proper levels of Manganese and Vitamin K respectively. I am still concerned about the amount of fiber in this recipe and am considering replacing a portion of the cornmeal with a lower fiber carb.
