This recipe is aiming at replacing two meals in one day, while providing a complete set of micro-nutrients, a majority of the required fiber and protein, and some of the carbohydrates and fats.
Here are some instructions for how to make these bars:
Combine dates, oil, corn syrup, and water in a food processor. Run the food processor until the dates are mostly chopped and are turning into a paste. Now add the peanut butter and Run until this becomes a fine paste. This will be the glue for the rest of the ingredients.
In a stand mixer, combine the oats, flaxseed, wheat bran, and psylliium Husk with the "glue" that we made. Mix until all combined.
Powder together all of the vitamins, then mix it with the soy protein powder.
Add the soy and nutrient mix to the mixer in parts until all is used.
Mix in the mixer until it starts to clump up and looks evenly mixed. It should be crumbly but stick together nicely without much effort.
Put the contents in to a baking sheet (one that is about half to one inch deep) and press it evenly until it's tightly compacted and is one solid substance. Put the baking sheet in the fridge or freezer for one hour.
Place parchment on the counter and turn the baking sheet upside down on the parchment. Tap the bottom of the pan until it falls out.
Cut it into even portions. Individually wrap each bar or place each in a plastic bag.
