- Previous version tasted acceptable, but was still too dense and dry.
- Removed date paste, doubled applesauce - less of a hassle, better for texture.
- Removed pre-soaking of flax and chia - previous version had an almost gummy texture, hopefully this change will make it feel less chewy and more fluffy.
- Increased water content, raised baking temperature, also in the hopes of improving texture.
Preheat oven to 350 degrees F. Mix oats, whey protein, chickpea flour, spinach powder, salt, baking powder, flax, and chia in a bowl. In a blender, blend the almonds and pumpkin seeds into a coarse powder; add to dry ingredients. In a separate bowl, beat the eggs. Melt coconut oil. Stir in applesauce, eggs, coconut oil, vitamin D, and enough water to form a thick batter.
Line a baking pan with parchment paper. Pour in the batter. Bake until lightly browned on top.
