It's organic/non-GMO. Thats what you are paying for. Otherwise the cheap Gallon jug of vegetable oil (i.e. soybean oil) is a perfectly compatible substitute. It is also dramatically cheaper.

There is a column that list how many days each ingredient lasts. So 6 days worth of masa and about 250 days worth of some others. Searching around you can find cheaper prices, but it's still going to be more than what's listed.
