Each meal (6 meals / day):
- 1/2 cup rice flour
- 2 tbsp whey
- 1/4 cup peanuts (in a separate bag)
- 1 tbsp corn bran
- 1 Tbsp banana powder
- 1/2 packet of aspartame
- 1/2 packet of non-dairy creamer
- pinch of salt
- pinch of cinnamon
The main issue here is the iron is too high because of the fortified baby cereal. I have been looking for a good rice cereal that is not iron-fortified, but haven't found any. Too much iron causes constipation early on and can have devastating health affects over the long term, so I don't recommend doing this diet 100% for any long period of time. The other surpluses/inadequacies don't really concern me much, including the elevated manganese (from the whey).
The corn bran provides fiber to keep GI tract running smoothly.
Freeze-dried banana is for flavor. I also recommend trying a little aspartame to add more sweetness and see if that works better for you. You could also try other powdered fruits as well. I recommend strawberry. I'd avoid blueberry as it tends to clump much more than other freeze-dried fruits and it's more expensive.
The peanuts are a good source of fats. They aren't meant to be mixed into the recipe but rather eaten in a separate bag apart from it. You may want to try varying up what type of nuts you use to get a healthy variation of fat types. You could add in fats by way of flax meal or almond flour or a fish oil supplement, but I never found them to be as good as eating nuts separately.
Culturelle is a probiotic and could be left out if you want.
