A diet consisting of literally just potatoes. I've chosen Russet: about 3/4 lb (340g) each. I'm not trying to lose weight; this is just a Lent thing.

I wanted to see how many potatoes I needed to eat in a day, how many was safe, and what nutrients I would get. Here's the results:

According to my sack of potatoes: Each potato is 110 calories. Each potato weighs 148 g. So, a 2,000 calorie diet would be 18.18 potatoes a day.

The maximum you can before you start overdosing on Niacin is 2596 g, which is ... 18 potatoes? According to the recipe, that's 2454 calories, but according to my bag, that's 1929 calories. The point seems to me that I should eat 18 potatoes a day until I can do more research.
