Note: for eggs I'm using the vitamin K content from Whole Food Catalog. This is very much cheating, and if I were to use other values from that site it would result in a serious zinc deficiency. In other words, the nutrients of egg yolks seem to vary a lot, probably depending on what they've been eating.
As for the calcium content, it is significantly more bioavailable from sweet potatoes than milk (something like 33% -> 44%) and the suggested 1g is based on the bioavailability of calcium from milk. A large amount of the calcium actually comes from the yolks, but I doubt there's much oxalate to be found there... be right back. Okay, so some random .edu site recommends eggs for a low-oxalate diet. That's good enough for me.
Omega 3 is low and both WFC and USDA agree on this.
